Claire Saffitz’s cookbook Dessert Person was on my Christmas list, but when I discovered that she released one of the recipes online, I had to make it immediately. Full disclosure: I have actually made this recipe 3 times within the past month!
The first batch I royally botched by not cooking them long enough (since I live in Colorado at a higher altitude baking times always vary). For the second batch I could not find Dutch process cocoa powder, and instead added baking soda to offset the acidity of the chocolate. The brownies were incredible – fudgy, dense, chocolatey without being overly rich. But… I really wanted to follow the recipe with the proper ingredients. So after ordering dutch process cocoa powder on Amazon, it was time for round 3.
I’m not really sure if Dave or I could tell a difference between the cocoa powders; batch #3 was just as delicious as the previous one. For each serving, we warm them up and top with vanilla ice cream, similar to a chocolate lava cake. Needless to say I will never make another brownie recipe again! Click here for the recipe!
