Peach & Blueberry Buckle

David has been begging me to make this recipe for a while now, so I decided to surprise him with it for his birthday. The batter is very easy to make. Folding in the fruit is a little awkward because there’s so much, but don’t worry because the batter will rise up around the fruit. 


INGREDIENTS
1 3/4 cup all-purpose flour
2 tsp baking powder
1/2 tsp fine sea salt
1 stick of butter at room temp
1 cup light brown sugar
1 large egg
1/2 tsp vanilla extract
1/2 cup sour cream
4 peaches, each cut into 8 wedges
1 pint blueberries
1/3 cup sliced almonds


RECIPE
1  
Heat oven to 350 degrees. Whisk together flour, baking powder & salt in bowl.

2  In a separate bowl, beat the butter & brown sugar with an electric mixer on medium-high until light and fluffy, 2-3 minutes.

3. Beat in the egg & vanilla

3  Reduce speed to low. Add half the flour mixture, then the sour cream, and then the remaining flour mixture, mixing well
    in between.

4  Fold in the peaches & blueberries.

5  Transfer the batter to an 8×8 inch or 2 quart baking dish and sprinkle with the almonds.

6  Bake until a toothpick comes out clean, 1 hr to 1 hr 20 min. Let cool slightly. Serve warm.
