When making resolutions for the new year, Dave and I like to reflect on what we did the previous year and how we can build on it. We always want to continue to grow, expand horizons, and live a full life – so the goals we create aim at supporting that. While we’re still drafting up our list, here’s some of our favorite moments of 2018.
One of my favorite things to do after a vacation is go through all of our photos and share them on the blog. I was a bit late digging into our desert road trip, but managed to finish them last year. (And they dominated our IG Top 9!)
Afternoon tea at the Brown Palace in Denver is starting to become my birthday tradition. On top of the food being delicious, their holiday decor is absolutely stunning.
We are obsessed with the Olympics, and always have so much fun cooking a dish from the host country. This time around we made hotteok, a sweet Korean pancake.
For Dave’s birthday, I rented a cabin in Estes Park on the lake. He was able to fish right off of the property, while Biscuits and I relaxed and enjoyed the mountain views.
I don’t really remember how it started, but 2018 was the year of blueberry pancakes. Dave fine-tuned his recipe to perfection, and we’ve been eating them nonstop. I plan on sharing the recipe soon!
Our big trip of 2018 was spending a week in Paris. We had an amazing time wandering Parisian streets and stuffing our faces with macarons.
Every autumn I have a leaf-peeping checklist of places to see throughout Colorado. Last year I was super excited to discover Guanella Pass, a new scenic route with some of the most radiant fall foliage we’ve seen.
Camping in our R-Pod. I debated on including this, but we did have fun 2 out of the 3 times we used it. Even though in the end we decided it wasn’t for us, we do still have some fond memories from Camp Dick.
Over the holidays Dave and I went on a road trip to see our families. Biscuits absolutely loved staying in the hotels. When he wasn’t making everyone swoon in the lobby, he was busy looking out the window and barking at the cars below.
