This Halloween dessert uses my favorite oatmeal cookie recipe, and is super easy to decorate.
Warning: it’s impossible to eat just one!
INGREDIENTS
1 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 sticks butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
1 tsp vanilla extract
3 cups quick-cook oats
3-4 tubes of white decorating icing
1 box of raisins
RECIPE
1 Preheat oven to 375 degrees.
2 Combine flour, baking soda, and salt in a small bowl.
3 Beat butter, granulated sugar, brown sugar, eggs, and vanilla in a large mixing bowl.
4 Gradually beat in flour mixture. Then stir in oats.
5 Drop a rounded teaspoon onto parchment paper on a baking sheet.
6 Bake 12 minutes for chewy cookies, a couple minutes longer for crispy cookies.
Cool on baking sheet for two minutes before placing on a wire rack to cool completely.
7 After the cookies have completely cooled, “wrap” the cookies with icing, and add two raisins for eyes.
